It ferments in stainless steel vats, with very controlled temperatures. It is bottled young so as not to lose its aromatic qualities and minerality. Its distinct acidity prolongs the taste and pleasure of the tasting, making it desirable for countless gastronomic combinations.

Without any barrel influence, we created delicate, light and harmonious wines, reflecting the soil and the local climate. This young but structured wine, with aromatic notes, which give it a strong personality, culminates in an unparalleled freshness and youth. It is recommended to consume at a controlled temperature, in order to enhance your experience, accompanying dishes of salads, seafood, grilled or smoked fish and cold meats.

The reflection of the sun on the sea, the smell of wet sand and the sea breeze that travels through the vineyard, served as inspiration for the creation of this wine.
Its elegance and complexity, its soft and fresh mouthfeel, are a unique way of expressing the vineyard. It is balanced in a fresh wine, of great elegance, showing an open color, and an enormous aromatic complexity.
In the mouth it is long, with very velvety tannins contributing to a very structured wine, with mineral notes, in a very long and rich set of great intensity and persistence.

These wines are the expression of grape varieties with unique characteristics, well-adapted to the place of origin. The combination of natural factors – such as geology, topology and climate – is joined by the interpretation and art of our winemaker. The winemaker strongly believes in the varieties he brought to the Quinta, aiming to achieve quality wines that demonstrate the uniqueness of each one, in its terroir, presenting natural flavors and aromas.

Nature Wine

From the vineyard comes the environmental balance, guaranteed by the ecosystem that surrounds it, gradually, reasons why the Quinta has been eliminating the use of herbicides, pesticides and other pollution agents, looking for the path to a more sustainable agriculture. From the vineyard came the mixture of autochthonous varieties, according to Organic production. These are wines that reflect the characteristics of the vineyard and carefully selected grape varieties, vinified in ancient clay amphorae, an ancestral technique brought to Portugal by the Romans. Natural wines that translate a direct, authentic and vibrant profile, without the addition of yeasts or filtration.

Commendator

red / white

It is the reference wine of the Quinta. It reflects the unique temperament of the house. The Comendador Costa wine is born from the best grapes, which results in a wine full of personality, with a fragrant, fresh and very elegant aroma. After harvesting by hand, the grapes go in small boxes to the cellar, where, after an experienced treading in mills, it ferments and then rests in French oak barrels for at least two years.

It thus grows all its intensity, character and robustness. Its process is concluded with one more year of aging in bottle. Its unique tannin structure enhances a long aging in the bottle, and can significantly improve in aging for two decades, or longer.
